You say you're not from Yankton?

If you're coming in from out of town here's some info you may find helpful.

Coffee - there's a Starbucks at the Hy-Vee grocery store about 2 miles north of the start.  The Hy-Vee gas station has Caribou on tap.

Provisions - Hy-Vee also has various energy/power bars in their 'Health Market' section.  Gatorade is in the beverage aisle.

Lodging - if you're coming from way out of town there's a Days Inn immediately north of Ace Hardware.  There's also a Holiday Inn across the road.

Breakfast:  As far as I know there are no good breakfast options in Yankton.  Somebody PLEASE open a good cafe here!  You could try the 'Fry'n Pan' in the 2000 block of Broadway.  It's sort of a down-market Perkins.  Burger King at the intersection of Broadway and 4th Street is an old, if none too desirable, reliable.  If you're coming to Yankton via Vermillion you could give Ma & Pa's in Gayville a try.

Lunch/Post ride:  Tastee-Treat just west of Broadway on 4th (across from Burger King).  It's a traditional drive (or bike)-in featuring taverns (a.k.a. loose meat sandwiches or Maid-Rites) and decent malts.

Beer:  Good beer: Ben's Brewing on 3rd St. downtown or The Landing adjacent to Riverside Park,
Awful beer: The Icehouse (across the street from The Landing) if you like breaking beer bottles on concrete, or the Walnut Tavern on 3rd St. if you like looking at moth-eaten taxidermy.
